A brilliant sparkling wine with a pale pink colour, fine and persistent perlage. Pleasant hints of berries and ripe fruit on the nose make it elegant and fresh on the palate. Excellent as an aperitif and with seafood dishes. Grape Negroamaro Alcohol content 12% Long Charmat (9 months). The grapes, harvested in boxes slightly ahead of time, were processed intact directly in the press and underwent traditional white vinification with fermentation at fairly low temperatures (14°C). Foaming in the autoclave took place in December and lasted about 1 month. The sparkling wines thus obtained remained maturing on their lees for about nine months before bottling.

We tasted a preview of the brut Charmat Method sparkling wine whose name 'L'eremita' is a tribute to one of Futani's 'Eremiti' hamlets. The label recalls a net in which the hermit feels trapped, like the sparkling wine when it is closed in the bottle. The perlage is fine and brilliant with small golden highlights. The nose recalls hints of citrus and unripe yellow fruit, enriched by pleasant floral and yeasty notes. The drink has good freshness and finesse; the finish is long and clean. It is not for nothing that his ancestor Michele, a thoroughbred Cilentano, left everything and ran as a volunteer among the 'Thousand' in Sicily following Garibaldi. Salvatore, who inherited an ancient and historic 18th-century family palazzo that later became a winery and barrel cellar, has been a wine grower by vocation since 2003 on the Rutino hills, not far from the Agropolese sea, where he owns two hectares of Aglianico vines. He has also recently planted a few strains of fiano. But in the past he has devoted himself with passion above all to music as a record dealer and/or disc jockey. He produces only three labels under a strict regime of 'natural' viticulture, pending organic certification, as well as an excellent evo oil from the Salella cultivar. Alcohol content 12.5% Year of production 2020 Base Pinot Nero The name Olcru is linked to the Oltrepò pavese territory and its historical wine-making traditions. The suffix -Ol- refers to Oltrepò while the denomination -cru- was dedicated to the noble pinot noir, the prince wine of the Oltrepò pavese and our vineyards. The logo features a cross, the Benedictine cross, in homage to the monks who saved Pinot Noir by continuing to cultivate it within their convents. The Vigne Olcru Enigma Nero Pinot Noir IGT 2018 has a carmine red colour; the nose has hints of small red fruits, cherry and a pleasant hint of violet. Controlled balance in the mouth where cherry and spice flavours emerge on discreet tannins. Long, fruity and refreshing finish. Recommended with medium mature cheeses, white and red meats. A wonderful wine with great freshness.

Aglianico 100% Alcoholic degree 14,5 Vigna del Ciglio Municipality of Rutino 10 months in used tonneaux and barriques 2 months in bottle The Aglianico grapes are harvested and processed in an absolutely natural way, without any temperature control: a choice that, in keeping with the production chain, is the result of Magnoni's desire to make each vintage an "artisanal" product, enhancing the due differences linked to the course of the season. Neither sulphites nor selected yeasts are added during vinification, nor are any filtrations carried out with the exception of a roughing with 5-micron cartridges. Malolactic fermentation takes place spontaneously in wood, in 550-litre tonneaux and exhausted barriques in which the wine rests for 10 months. After a further 6 months in the bottle, it can finally be said to be ready. Magnoni does not sell on the web, but only in his own cellar and in a circuit of specialised wine shops. Choices against the tide, starting with the label: sober, bare, with only the legal indications and no 'back' to illustrate and decant the contents: 'I prefer the wine to speak for itself' to quote his words. It is made exclusively from Aglianico grapes, a very widespread variety in this area. The vineyards are cultivated organically, limiting the use of synthetic products. Between the rows of vines, work continues under the banner of sustainability up to the moment of harvesting with manual sorting of the bunches. Upon arrival at the winery, the grapes are pressed and then divided into two batches, one of which skips alcoholic fermentation in contact with the skins and is then used as a liquer de tirage for the prise de mousse. No disgorging is carried out after the second fermentation in the bottle, in line with the winery's ancestral methods. Fric Aglianico Rosato Frizzante Paestum IGT is a wine designed to be enjoyed when young, when the lively varietal aromas emerge.

THE FIRST BOTTLED ROSATO IN ITALY is made mainly from Negroamaro grapes. It conquers at first glance with its characteristic crystalline peach blossom colour and enraptures you with fruity hints of cherry and wild strawberry. In the mouth it is fresh, soft and pleasantly persistent. It is recommended with risottos, boiled meats and fish and white meat dishes. Excellent with frisa salentina. Grapes 100% Negroamaro Vinification: skin maceration of the grapes (temperature 10°C) for a few hours followed by extraction of the 50% free-run juice. After static decantation, alcoholic fermentation starts in stainless steel vats at a temperature of 16-20°C.
